Petit Verdot- Chaski 2021

{"type":"root","children":[{"type":"paragraph","children":[{"type":"text","value":"Planted in the bed of the Inca River, our Petit Verdot vineyards develop in an environment surrounded by large stones and soils with low water retention capacity. These poor and stony soil conditions contribute to appeasing the powerful and robust tannins characteristic of this variety. It is the delicacy of Chaski's vinification, together with its 16 months of aging in French barrels, that manages to soften this 100% Petit Verdot wine and bring it to a delicate balance between intensity and silkiness. Complemented by aromas of red fruits, spices, floral notes and a touch of graphite, they manage to give complexity to achieve an elegant and long finish.","italic":true}]}]}

TASTING NOTES

Chaski Petit Verdot has a deep purple color with violet reflections that denotes a great intensity, which anticipates an intense sensory experience. The nose is dominated by aromas of ripe black fruits such as blackberry and plum, spicy nuances such as black pepper, notes of graphite that add complexity and floral notes such as violets and lavender that enrich its profile, giving delicacy and freshness. The oak ageing adds subtle notes of tea and tobacco. On the palate this wine has an energetic and elegant body, the tannins are present in an intense but well integrated way, showing a balanced structure. Ripe black fruit becomes more prominent on the palate, with intense, juicy flavors and a subtle floral note that adds a pleasant, perfumed nuance. Balanced and persistent finish.

PAIRING

Red game and fattier meats are a good match; highly seasoned foods and mature cheeses enhance and help balance its intense tannins. Surprisingly, Asian cuisine is an excellent pairing, especially sweet and sour pork or duck dishes, where the tannins and the acidity are balanced by intense flavors and spicy sauces.
